How To Lay Out A Kitchen For Real Cooking

The primary prep run

Reserve your longest stretch of uninterrupted counter—ideally 36 to 48 inches—directly between the sink and the cooktop. This is where most prep happens, so keep your cutting board, knives, and trash pullout right here.

Flank the range with at least 12 to 18 inches of heat-resistant counter on both sides. Keep high-heat cooking oils, kosher salt, tasting spoons, and daily skillets within arm's reach.

Store every tool where it gets used rather than grouping by object type. Place heavy pots and pans in deep drawers below the range, and colanders and prep bowls right next to the sink.
