In a large bowl, combine the **masa harina**, **salt**, and **warm water** until a smooth, moist dough forms that doesn't crack.

Divide the dough into 8 equal balls and cover with a damp cloth to prevent them from drying out.

Flatten one ball into a **4-inch disc** in your palm, then place a spoonful of cheese in the center.

Fold the edges of the dough over the **filling** to seal it, forming a ball again, then gently flatten into a disc.

Heat a **cast-iron skillet** or non-stick pan over medium-high heat with a tiny bit of oil.

Cook for about **3–4 minutes per side** until the surface has golden brown spots and the cheese is melted.
