  1. Rinse the bok choy thoroughly in cold water to remove any grit hidden between the stems and leaves, then pat it very dry.
  2. Heat the neutral oil in a large skillet or wok over medium-high heat until it is shimmering but not smoking.
  3. Add the bok choy to the pan, cut-side down, and sear undisturbed for 2 minutes until the edges are nicely charred.⏱ 2 min
  4. Toss in the minced garlic and ginger, stir-frying for 30 seconds until they are fragrant but not burnt.⏱ 30 sec
  5. Pour in the soy sauce and a splash of water, then cover the pan with a lid for 1 minute to steam the stems.⏱ 1 min
  6. Remove the lid, stir in the toasted sesame oil, and cook for another minute until the liquid has evaporated and the sauce coats the greens.
  7. Transfer to a serving plate and sprinkle generously with the toasted sesame seeds.
💡
Chef’s tip · Always ensure the bok choy is completely dry before hitting the pan to prevent the oil from splattering and the greens from steaming prematurely.
