  1. Pat the salmon fillets completely dry with paper towels to ensure a good crust.
  2. Season both sides of the fillets generously with salt and pepper.
  3. Heat the olive oil in a non-stick skillet over medium-high heat until it shimmers.
  4. Place the salmon in the pan skin-side down and press gently with a spatula for 10 seconds to keep it flat.

  7. Remove the salmon from the pan and set aside on a plate.
