  1. Place half the onion, half the chile, half the cilantro, and all the salt in a molcajete (volcanic stone mortar) or bowl.
  2. Grind the aromatics with a pestle or mash with a fork until a fragrant green paste forms.
  3. Slice the avocados in half, carefully remove the pits, and scoop the flesh directly into the bowl.
  4. Pour the fresh lime juice over the avocados to preserve their color and add bright acidity.
  5. Mash the avocado coarsely with a fork, leaving plenty of medium chunks for a rich texture.
  6. Fold in the remaining raw onion, chile, cilantro, and diced tomato until gently combined throughout.
  7. Taste with a tortilla chip and adjust seasoning with an extra pinch of salt or lime juice if needed.
