  1. Poach the chicken by bringing your chicken broth to a gentle simmer in a saucepan, adding the chicken, and poaching for 10-12 minutes until cooked through. Remove the chicken to cool and shred, reserving the warm poaching broth in a separate bowl.⏱ 12 min
  2. Sauté the vegetables by melting the butter in a large skillet over medium-high heat, then cooking the onion, carrots, and celery until they begin to soften, about 5 to 7 minutes. Stir in the garlic, thyme, salt, and pepper for 1 minute until fragrant.⏱ 7 min
  3. Make the gravy by sprinkling the flour over the vegetables, stirring constantly for 1 to 2 minutes to cook off the raw flour taste.
